Some dishes are simply on the menu. Others become the reason people visit. At Dear Diana, that dish is our Signature Baklava Pancake.
It takes the flavours of one of the world's best loved pastries and brings them to the brunch table. Here is what goes into it, and how to enjoy it.
What is baklava?
Baklava is a layered pastry made with thin sheets of filo, chopped nuts and a sweet syrup or honey. It is a much loved sweet across Turkey, Greece, the Balkans and the Middle East, often served with tea or coffee and shared with family and friends. Pistachio is one of its most famous fillings.
What is on the plate
Our version brings the best parts of baklava to a stack of pancakes:
- Pistachio cream: smooth, nutty and rich
- Crispy filo flakes: the crunch of baklava in every bite
- Pistachio: scattered on top for texture and colour
- Maple: a drizzle of sweetness to bring it all together
It is vegetarian and costs £16.
Made for sharing
The Baklava Pancake is generous, and it is one of the dishes we recommend sharing. A favourite way to order is one savoury plate and one sweet plate between two:
- With the Full English: a proper breakfast, then something sweet to finish
- With the Shakshuka: eggs in a spicy tomato and pepper sauce, followed by pistachio and maple
- With the Medi Bowl: green hummus, grilled halloumi and salad, then a sweet treat to share
What to drink with it
- Flat white: a short, strong coffee cuts through the sweetness. Not sure which coffee to choose? Read our guide to flat white vs latte.
- Ceremonial matcha: its earthy, grassy notes pair naturally with pistachio.
- A pot of tea: English Breakfast or Fresh Mint, for a more traditional baklava moment.
